ABOUT THE BUSINESS: New Farm Deli and Café is a family-owned deli café operating since 1975.
Since then, it has become an iconic community hotspot where locals, the wider Brisbane community flock to buy authentic European delicacies and indulge in high quality cafe-style cuisine, featuring a-la-carte authentic Italian dishes. It is open daily for breakfast and lunch (from 6AM to 6PM)

In this varied and fast-paced role, you will join our team of Chefs to ensure that we continue to create delicious plates utilizing only high-quality produce.
THE SUCCESSFUL CANDIDATE MUST HAVE:- Certificate IV in Commercial Cookery or Kitchen Management. Diploma (or higher) in Hospitality Management highly
- Minimum 2 years’ experience as a Chef
- Solid understanding/knowledge of Italian Cuisine and know how to handle fine, high-end quality ingredients.
- Solid understanding of the importance of quality ingredients and how to make the best use of them.
- Previous experience in fast-paced, high-volume kitchen environment
- Confidence, reliability, strong work ethic and outstanding hygiene protocols
- Five days per week

- Menu and operational planning as well as creation of specials and menu evolution.
- Cooking and service of food according to the restaurant’s quality and service standards.
- Training and induction of all new staff and continue to train, instruct, implement and monitor all kitchen staff on a
- Ordering, receiving and storage of food.
- Food costs - meeting and exceeding agreed targets.
- Addressing food wastage / spoiling.
- Safety and cleanliness of food preparation and all kitchen and food storage areas.
- Food safety standards/hygiene, food handling and correct handling of food.
- Creating a harmonious environment amongst all staff within the establishment, especially with other chefs, cooks,
- Meeting on a regular basis with the two owners of the business.
- Organize the production of high-quality food according to menu guidelines.
- Implement new products/recipes/ prep techniques/ systems, backed up with intensive training and demonstration.
- Supervise junior staff in setting up, closing down and accurate in cleaning and sanitizing rituals.
- Co-ordinate any (where necessary) instructions/jobs/orders with deli, café and kitchen staff.
- Communicate & confer with chef leader/s and with the owners regarding any problems or changes needed.
- Ensure the Health and Safety procedures for staff and patrons are in practiced and followed.
- Train staff according to training guidelines.
- Ensure that stock levels and rotation are maintained.
- Carry out any other duties - as advised from time to time.
- Before the end of your shift, give instructions/guidelines to closing staff and follow up next day.
- Monitor staff productivity and performance constantly.
- Lead by example – always.
- Train and supervise all members of the kitchen team according to staffing guidelines.
- Ensure good communication between floor staff and kitchen and within the kitchen.
- Ensure that supplies and deliveries are properly ordered.
- Ensure that supplies and deliveries are received and accounted for.
- Undertake regular stock takes / maintain stock levels.
- Maintain cafe cost control systems.
- Achieve food cost figures according to agreed standards.
- Support the front of house supervisor in the management of the dining room.
- Ensure that the kitchen staff follow hygienic food handling practices.
- Organize and implement regular cleaning, sanitizing procedures and waste disposal.
- Organize and implement safe work practices.
- Maintain kitchen equipment and plant.
- Report regularly on the above activities to the owner.
- Plan and implement menu changes in consultation with the owners.
- Any other duties as reasonably required from time to time.
ROSTER: 5 days p/week with two consecutive days off. Will include weekend work but NO NIGHTS or PUBLIC HOLIDAYS
