Brief introduction of the company:A licensed Japanese restaurant located on Pacific Highway in Gordon, NSW, offering a bar and seating for approximately 80 guests. We serve a wide range of authentic Japanese cuisine, including sushi, fresh sashimi, teriyaki, grilled dishes, skewers, hot plates, salads, donburi boxes, udon, ramen, rice dishes, appetizers, miso soup, and more—providing the local community with a genuine taste of Japan.

Main duties to be performed:The successful candidate will be responsible for preparing, seasoning, and cooking food in our restaurant, with duties including:
(a) Planning menus, estimating food and labour costs, and ordering food supplies; (b) Monitoring the quality of dishes throughout preparation and presentation stages; (c) Supervising kitchen operations, with particular attention to the handling of raw fish, raw meat, and other ingredients used in sushi preparation; (d) Discussing food preparation and health standards with manager, cooks, kitchen, and service staff, and ensuring compliance with hygiene regulations; (e) Demonstrating cooking techniques, advising on procedures, and overseeing proper temperature control of ovens, grills, and other kitchen equipment; (f) Preparing and cooking a variety of dishes, including sushi; (g) Supervising the preparation of sauces, gravies, and garnishes for sushi and fried dishes
(h) Organising cooks and kitchen assistants in plating processes, including portioning food, adding garnishes, and ensuring presentation standards; (i) Managing the portioning of raw ingredients for sushi, with strict adherence to hygiene and food safety protocols; (j) Advising on food preparation to meet special dietary requirements; (k) Selecting, training, and mentoring kitchen staff and apprentices.
(l) experience in filleting whole fish and also slicing fish for sushi and sashimi.(m)experience in trimming meat.
This is a Full Time Position.
The salary for the position
$75,000.00-80,000.00
