The Client

Shanika’s, located in Pakenham, VIC, is seeking an experienced Chef to become a part of their dynamic team. Their in-house restaurant specializes in Italian cuisine, offering a menu that celebrates traditional flavors and culinary techniques.

About the Role:

As the Chef, you will play a pivotal role in crafting authentic Italian dishes that resonate with their patrons. Your creativity and expertise will contribute to a menu that honors classic Italian recipes.

The Role

This is for a full time role with an annual salary set at $77,000 plus superannuation.

Duties will include:

Plan, direct, and supervise the preparation and cooking of traditional Italian dishes, ensuring adherence to authentic recipes and techniques.

Determine the presentation of Italian cuisine, creating visually appealing and culturally appropriate food displays.

Establish production schedules and staff requirements to ensure timely delivery of Italian meals and services.

Estimate the quantities and costs of required supplies, focusing on high-quality Italian ingredients such as fresh pasta, olive oil, and regional cheeses.

Inspect supplies, kitchen equipment, and work areas to ensure compliance with Italian culinary standards and hygiene regulations.

Instruct cooks and kitchen staff in the preparation, cooking, garnishing, and presentation of Italian dishes, fostering a deep understanding of Italian culinary traditions.

Monitor sanitation practices to ensure that all employees adhere to health and safety regulations pertinent to Italian food preparation.

Order or requisition food and other supplies necessary for the efficient operation of an Italian kitchen, maintaining relationships with specialty suppliers.

Analyze traditional Italian recipes to assign accurate pricing to menu items, considering the costs of ingredients, labor, and overhead.

Prepare and cook a variety of Italian dishes regularly and for special events, showcasing regional specialties and seasonal ingredients.

Supervise and coordinate the activities of cooks and kitchen staff engaged in the preparation of Italian cuisine.

Collaborate with restaurant management to plan and develop Italian recipes and menus, taking into account seasonal availability of ingredients and customer preferences.

Cooking meals according to Shanikas recipes

Check the quality of raw and cooked food products to ensure they meet established Italian culinary standards.

Verify the quantity and quality of received products, ensuring they align with the requirements of Italian cooking.

Demonstrate new Italian cooking techniques and the use of specialized equipment to kitchen staff, promoting continuous learning and innovation.

Record production and operational data on specified forms, maintaining accurate documentation of Italian kitchen activities.

Prepare all of the different components used in the Shanikas kitchen following Shanikas recipes and processes.

Teach and oversee the Larder back up employee on how to operate the larder section, giving constructive feedback

Requirements

Relevant qualifications in cookery, hospitality, or tourism

Minimum 3 years of experience as a Chef

Must have at least 3 years’ experience working in a commercial kitchen environment

At least 3 years’ experience with creating new Italian dishes

At least 3 years’ experience and strong knowledge in authentic Italian cuisine, including regional specialties

Passion for high-quality Italian food and elegant presentation

Sound understanding of and commitment to food safety standards

Experience in managing kitchen operations and leading a team

Proven ability to train and mentor kitchen staff

Ability to perform effectively in high-pressure kitchen environments

Experience with goods ordering and accurate menu costing specific to Italian ingredients

Proficient in stock control and minimizing food wastage
