CHEF

The CHEF position is a hands-on management role the Kitchen team.

The CHEF also takes a leading role in the delivery of menus and establishes ways to maximise the value of our product to patrons and maintain company profits.

This role manages the Operations and Kitchen team, and directly reports to the Licensee and indirectly to the Managing Director.

Responsibilities include:

Execute the menu and food concepts in accordance with the guidelines of The Kitchen food offering brief and as requested by the owner/management team
Actively collaborate in creating dishes and plating designs in line with kitchen food offering concepts and standards
Ensure there is adequate staffing of the kitchen to enable the smooth and efficient production and delivery of food for normal service as well as for functions and late night service
Manage, control, improve and increase our production ability
Manage accurate stock control and ordering
Maintain an organised, clean and hygienic work environment
Keep abreast of current and emerging trends in food
Ensure that Occupational Health and Safety guidelines are followed at all times
Attend important functions planning meetings to discuss menu ideas that will assist with the sales process
Be responsible for the rostering and operational management of kitchen staff
Be responsible for stocktaking of kitchen items and kitchen inventory management

Be responsible for kitchen profitability analysis, margin, financial and operational reporting

Skills needed for this role:

Strong organization skills and excellent cooking skills; Food and Beverage culinary management experience with demonstrated leadership
Understanding of and the ability to maintain food safety standards and HACCP
Demonstrated ability in planning, resourcing and controlling expenses
Knowledge of movement regulations and safety standards
Ability to work in a fast paced environment

Excellent salary package for the right candidate. Salary range is $70,000 - $80,000
