Location: The Provincial Hotel Ballarat, Lola Restaurant 121 Lydiard St N, Ballarat, VIC 3350
Salary: Competitive, based on experience- $70000- $85000 + Super per year

The Ceylon Harmony Pty Ltd is looking for a passionate, experienced, and dedicated Restaurant Manager to join the leadership team and take the reins of Lola and its associated dining areas. This is an exciting opportunity for the right candidate to manage and elevate our restaurant operations to new heights.
The Role:As the Restaurant Manager, you will oversee Lola Restaurant, the Lola Library private dining room, the Indoor/Outdoor Courtyard, and in-room dining for the hotel. This hands-on role is key to delivering an outstanding guest experience while ensuring the smooth day-to-day operation of all F&B services.
Key Responsibilities:
- Manage all aspects of the restaurant, bar, courtyard, in-room dining, functions, and events
- Work closely with the Hotel General Manager, Assistant GM, and Head Chef to curate seamless guest experiences
- Lead, recruit, train, and develop a high-performing team
- Ensure compliance with health and safety regulations at all times
- Manage rosters, day-to-day team operations, and guest service priorities
- Oversee ordering, stocktaking, and inventory management
- Implement and manage F&B SOPs, policies, and procedures to maintain exceptional standards
- Foster a positive, collaborative team culture and a motivating work environment
The Ideal Candidate Will Have:
- A minimum of 3 years of relevant experience in a well-established fine dining or à la carte restaurant, ideally in a managerial role
- A strong passion for premium food, beverage, and exceptional service standards
- A deep knowledge of F&B operations and trends, with experience in high-pressure environments
- Excellent problem-solving, multitasking, and prioritization skills
- A friendly, outgoing personality with the ability to lead by example and motivate a team
- Experience in training and mentoring staff at all levels
- Proven ability to manage rostering and staff scheduling effectively
- Flexibility to work weekends, nights, and public holidays
