Job description:
  • Ensuring all ingredients are prepared, cooked, and presented to a high standard, with consistent portion control and adherence to quality specifications.
  • Assisting the Head Chef and Sous Chef in defining menu concepts, experimenting with flavours, and developing new dishes.
  • Overseeing the smooth operations of assigned kitchen sections, ensuring effective coordination with other sections to maintain workflow and consistency.
  • Leading and mentoring junior chefs within the section, providing guidance and support to uphold high standards of quality, efficiency and teamwork.
  • Enforcing strict cleanliness, sanitation, and safety standards within the section to maintain a hygienic and safe kitchen environment.
  • Monitoring stock levels, reducing waste, managing deliveries, and organising stockrooms to maintain efficient inventory control.
  • Adhering to company and client policies, including health, safety, and hygiene standards, and ensuring that all staff follow these procedures.
  • Regularly checking the taste, temperature, and appearance of food items to ensure consistency and high quality in addition to preserving the ingredients, keeping it fresh.
  • Keeping all tools and perishable items organised in designated, hygienic areas, ensuring items are easily accessible for efficient preparation.
Qualifications/Attributes:
  • Must hold a Certificate III in Commercial Cookery or higher, or at least 3 years of relevant work experience in lieu of the qualification.
  • Must possess a minimum of 3-5 years of relevant work experience.
  • Strong attention to detail and commitment to culinary excellence
  • Creative approach to food with a willingness to innovate
  • Proven leadership skills and ability to mentor junior team members
  • Excellent organisational and time management abilities
  • In-depth understanding of food safety and hygiene standards
  • Ability to work well under pressure and as part of a collaborative team
  • Effective communication and coordination skills

Salary Range: $70,000 - $80,000 p.a. excluding superannuation.
