ABOUT THE ROLE:
This is your chance to join the team at the RAILWAY CLUB HOTEL in Port Melbourne VIC as part of Morris Hospitality.
The Railway Club Hotel is an iconic venue that has been in operation in Melbourne for over 40 years and remains one of the most popular steakhouse restaurants in the city.
We have an exciting opportunity for an experienced restaurant professional Chef de Partie - a person who is capable of driving excellent product, service and team culture. At the Railway Club Hotel, and across all Morris Hospitality venues, we are dedicated to ensuring the highest level of service and the smooth operation of all daily kitchen duties.
As Chef de Partie, you will be responsible for:
- Supporting kitchen & front of house staff in delivering great food on a consistent basis
- On-shift management of your section
- Maintaining service standards & contributing to team culture & guest experience
- Leading the section in organisational & procedural development
- Assisting with training of junior kitchen staff
- Mis-en-place & preparing for service
- Assisting senior chefs to plan menus
- Quality control of food production
- Preparing & cooking all food items
- Ensuring cleaning & storage of kitchen section/equipment
- Explaining & enforcing hygiene regulations, food safety & company policies/procedures
- General kitchen operational duties as required
Full-Time Salary: $75,000 - $80,000
ABOUT YOU:
To be considered for this position, you will need to demonstrate the following:
- Trade qualifications
- Minimum 2-3 years' experience as Chef de Partie
- Experience in similar-style venue
- Experience with meat/protein and related products
- Experience with sourcing fresh local produce
- Demonstrated ability to create new menu ideas & assist with menu preparation
- Ability to work collaboratively in a high-energy kitchen
- Ability to multi-task & maintain 5-star standards of quality & service
- Strong understanding of produce, culinary techniques & kitchen equipment
- Ability to work in a fast-paced, high-volume environment
- Keen eye for detail & a passion for creating visually appealing & delicious dishes
- Keen interest & passion for keeping up-to-date with industry trends
- A working understanding of & ability to maintain food safety & HACCP
- Excellent communication skills
- Flexibility to work various shifts including weekends, nights & public holidays
