Chef de Partie

On behalf of our client, La Comitiva Pty Ltd, we are advertising. La Comitiva Pty Ltd operates a contemporary European styled dining, drinking, and socializing venue named Amuni. The venue provides lunch and dinner as well as a bar and small-plate services.

The menu comprises a wide range of options from small options through to substantial meals. Traditional Italian & Mediterranean cuisine features on the menu, along with other European and Middle Eastern inspired dishes. Special events are held at Amuni, and private functions are accommodated.

We are looking for a full-time Chef de Partie to run our kitchen.

Key Responsibilities:

• Creating menus keeping in mind availability of seasonal ingredients.
• Preparing special variety of dishes in a professional environment.
• Ensuring all dishes are of excellent quality.
• Ensuring that the Inventory is always stocked and cost effective.
• Pizza dough preparation as a direct and Indirect fermentation.
• Ensuring team members are always following the hygiene requirements laid down by the health department.
• Training and mentoring staff.
• Maintain clean and safe kitchen and ensuring sanitation practices are followed daily.
• Managing relationships with distributors and resolving any issues with vendors promptly.
• Other ad hoc duties as required.

Requirements:

• Must have 3-4 years of experience managing a kitchen.
• Must have advanced knowledge of Italian cuisine.
• Must have basic understanding of Finance/Inventory and cost control.
• Ability to work long hours in a busy environment.
