The Client
Rooks Pizza & Diner is a popular contemporary restaurant serving fresh pizza, seafood and grill in town in Seymour, VIC. They are now looking for a Chef to join their kitchen team.
The Role
This is a full time role with an annual salary ranging from $73,000 to $75,000 depending on experience plus superannuation, and is based in Seymour, VIC.
Responsibilities
Planning and developing diverse menus, focusing on Italian dishes, while estimating food and labour costs to ensure profitability.
Overseeing the preparation and presentation of all dishes, maintaining the highest quality standards throughout all stages.
Collaborating with management and kitchen staff to address food preparation challenges and implementing effective solutions.
Demonstrating and educating kitchen staff on various cooking techniques and procedures to enhance their skills and maintain consistency.
Preparing and cooking food items, ensuring adherence to recipes and quality standards.
Enforcing strict hygiene and safety regulations within the kitchen to comply with health and safety standards.
Selecting, training, and supervising kitchen staff, fostering a collaborative and efficient work environment.
Managing inventory by ordering food supplies and maintaining appropriate stock levels.
Monitoring portion sizes and waste to ensure cost control and efficiency.
Staying updated with industry trends and incorporating innovative dishes and cooking techniques into the menu.
Expertly preparing and cooking meat-based dishes, including steaks, ribs, and parmigiana, utilising appropriate cooking methods to achieve desired flavours and textures.
Developing and refining recipes for meat dishes, ensuring they meet the restaurant’s quality standards and appeal to customer preferences.
Maintaining and operating kitchen equipment used in the preparation of meat dishes, ensuring they are in optimal condition and meet safety standards.
Requirements
To be successful in this role, you must have:
At least a Certificate 4 qualification in commercial cookery
Minimum 2 years of experience as a Chef
Must have at least 2 years of experience in cooking over open fire pizza oven
At least 2 years of preparing pizza dough from scratch
At least 2 years of menu planning experience
At least 2 years’ experience in dietary and nutritional planning
Must know how to create new recipes and design menu according to budget
Must know how to work with dietary requirements such as vegan, and gluten free food preparation techniques
Must be able to work with variety of proteins including beef, pork, seafood
Experience in adherence to recipe & portion control, as well as ordering and stock control
Ability to follow instruction & take direction
Excellent time management and attention to detail
Knowledge of food safety and hygiene standards
Excellent communication skills and the ability to work as part of a team
Be available to work on weekends to deal with many customers
