Our venue in Surry Hills has been a local favorite for over a decade, now a local institution. Dishing up modern Italian dishes & boasting a fantastic wine list. With a capacity for 60 seated guests, we are a boutique personalized & intimate venue.The service style is casual but professional table service, which is polished, relaxed & intuitive.
Located in the bustling historic area of Crown Street, Mille Vini is best known for a great date night location.
Our menu rotates often, using amazing ingredients from our experienced head chef.
The Role
As a Sous Chef, you will work closely with the Head Chef and kitchen team to create and execute a menu that celebrates fresh, high-quality, and seasonal produce. This is a hands-on role, ideal for someone with a passion for Italian cuisine and an eagerness to help lead the kitchen with innovation and precision.
Salary: $75,000-$80,000 excluding super
Responsibilities Include:
Supporting all aspects of the venue openingAssisting with research and development of new dishes, products, and produce
Leading the kitchen team on a daily basis during service
Training and mentoring junior kitchen staff
Managing kitchen operations in the absence of the Head Chef
Overseeing kitchen cleanliness and ensuring adherence to food safety regulations
Assisting with stock control and ordering supplies
Contributing to menu development that aligns with the brand and seasonal offerings
Supporting the team in maintaining high standards of food quality and service
The Ideal Candidate Will Have:
A passion for Italian cuisine and fresh produceStrong leadership skills and the ability to motivate and guide a kitchen team
Experience in creating and developing dishes
An understanding of COGS and managing kitchen budgets
Excellent communication skills and the ability to work well in a fast-paced environment
A proactive and hands-on approach to problem-solving and ensuring smooth kitchen operations
A commitment to maintaining the highest standards of food safety and cleanliness
Experience in managing suppliers and inventory control
