Job description:

  • Ensure all preparatory tasks are completed before kitchen operations begin including preparing ingredients, sanitizing workstations, and setting up necessary equipment.
  • Design and prepare meals using seasonal or trending ingredients
  • Create and pair menu items, planning courses, and ensuring that the menu reflects contemporary culinary trends and standards.
  • Inspecting dishes prior to delivery to customers, maintain presentation and quality standards.
  • Coordinate with local and international suppliers to source high-quality ingredients and place orders.
  • Manage daily kitchen inventory, monitoring ingredient levels, and ensuring the kitchen is fully stocked.
  • Assess and record ingredient levels, including produce, meat, seasonings, oil, and butter.
  • Conduct interviews and oversee the hiring and training of kitchen staff
  • Once on board, orient new staff members on kitchen layout and operational procedures.

  • Managing food, staffing, and overhead costs by optimising ingredient usage, minimising waste, and adjusting pricing in line with budgetary goals.
  • Ensuring smooth operations by maintaining strong communication between the Front of House and Back of House teams.
  • Lead catering meetings and other necessary gatherings as required.
  • Contribute to daily operational reports by maintaining a comprehensive daily logbook for all kitchen activities.
  • Maintaining a safe, clean, and compliant kitchen environment, adhering to food safety regulations, and managing regular cleaning and maintenance of kitchen facilities.

Qualifications/Attributes:

  • Must hold Certificate IV in Commercial Cookery, or at least 3 years of relevant work experience in lieu of the qualification.
  • Must possess at least a minimum of 3 years of relevant work experience.
  • Have outstanding communication and leadership skills.
  • Must have the willingness to collaborate with other colleagues.
  • Must be obsessed with cooking, including unique and emerging trends.
  • Must have organisational skills.
  • Ability to adapt and work in a fast-paced environment.

Salary Range: $70,000 - $80,000 p.a. excluding superannuation.
