Job Description:

Salary: $73200 plus superannuation

Qualifications & Experience:

AQF Diploma in Hospitality or Management and trade qualifications at least at AQF cert 3 level plus minimum 2 years of industry experience. 3 years of work experience can substitute for formal training.

Task and Duties include (but not limited to)
Design high quality menus and prepare 5-star meals for guests, ensuring guest satisfaction.
Maintain and monitor health, safety, and hygiene practices in the kitchen to ensure cleanliness and adherence to regulations.
Train and manage kitchen staff, conduct performance reviews, and provide guidance on food preparation techniques.
Designing high quality menus and preparation of food ensuring high quality and guest satisfaction.
Preparing, cooking and presenting 5-star meals
Monitoring the quality of meals at all stages of preparation and presentation.
Catering for dietary requirements and discussing food preparation issues with the Manager

Maintaining inventory and stock levels

Maintaining and monitoring all Health & Safety including hygiene practices and procedures ensuring high standards of cleanliness and adherence to legislative requirements,.
Overseeing hygiene, cleanliness and general safety of all staff working in food preparation areas.
Maintaining and exceeding standards of service and operating standards, ensuring 5-star guest experience.
Freeze and preserve ingredients, when possible, to eliminate food wastage.
Ensure freshness of food and ingredients by checking for quality, keeping track of old and new items, rotating stock and preserving foods correctly.
Making sure stock control and rotation procedures are implemented.

Maintain and enhance the food products through creative menu development and presentation.

Ability to lead, motive, inspire and support a kitchen team
Guest and staff member feedback management.
Interviewing, selecting and training new Chef/Cook/Kitchen Hands, who work and/or assist in the kitchen with dishes, food preparation, plating, meal serving and sanitising.
Illustrate different food preparation techniques and guide other staff.
Management of the on-shift kitchen team.
Managing the preparation of food menus and preparation issues that arise and discussing them with Management, Chef, wait staff.
Observation of the presentation and cooking, preparation of dishes at different stages of the cooking process.
Monitoring on-the-job learning and staff training.
Navigator learning, communication and participation monitored within agreed engagement levels.
Accurate and timely coordination of required WHS tasks and standards within agreed service levels.
