What you will do?:
- Lead day-to-day restaurant operations across premium dining spaces, delivering seamless service on event and non-event days
- Demonstrate extensive wine expertise, with strong knowledge across a broad range of varietals, regions and styles
- Provide high-quality, tailored wine recommendations that elevate the guest dining experience and drive premium service standards
- Partner with culinary, bar and service leaders to deliver cohesive menus, wine pairings and standout dining experiences
- Drive financial performance including labour planning, cost control, stock management and service productivity
- Recruit, coach and develop a high-performing team culture while ensuring compliance with WHS, food safety and liquor licensing requirements
More about you:
- Demonstrated experience as a Restaurant Manager or Sommelier, required
- WSET Level 2 qualification, highly desirable
- Proven capability leading premium dining or high-volume hospitality teams with strong service standards
- Strong wine knowledge and the ability to coach others on wine service, pairings and guest engagement
- Commercial acumen with experience managing costs, rosters and service performance
- Confident communication and stakeholder management skills across kitchen, bar and floor teams
