Our restaurant has its own name in the food and hospitality industry. Standing out from the rest, Tram Vietnam, which has been catering to the locals and tourists since December 2018, has been an established name in Toowoomba and is a popular dining venue for traditional Vietnamese cuisine and other delicious menu items.

Due to our rapid expansion over the years, Tram Vietnam is looking for a qualified and experienced Cook to join our business located in Toowoomba, who will perform the following duties and responsibilities:

• Undertake menu planning in consultation with Head Chef
• Oversee and participate in the preparation and cooking and serving of entree, main meals, desert etc in accordance with specified menus.
• Determine quantities to be cooked and size of portions to be served, taking into account dietary requirement (medical, ethnic, personal needs) of the customers.
• Check quantity and stock received and notify suppliers of deficiencies.
• Oversee washing and cleaning of floors, crockery, utensils, work surfaces and other kitchen's equipment to ensure that the necessary hygiene and health and safety standards are maintained in the kitchen and dining rooms as appropriate.
• Ensure that the appropriate clothing, including head wear, is worn at all times in accordance with the Council guidelines
• Co-operate fully with the statutory inspections and implement recommendation as appropriate.
• Act as supervisor to the kitchen staff on shift
• Deputise for the Head Chef during his/or absence
• Use food preparation equipment such as wok, oven, deep fryer, slicer, blender, mixer, grinder, toaster, etc.
• Produce dishes using basic methods of cookery through selecting ingredients; selecting, preparing and using right equipment; assembling and preparing ingredients; cooking dishes.
• Produce appetisers and salads, stocks, sauces and soups, vegetable, fruit and farinaceous dishes.
• Maintain quality of perishable items, and maintain kitchen hygiene for food and safety.
• Estimates food needs, reviews inventory to assure that adequate supplies are available, requisitions food and other supplies from stockroom or commissary
• Does skilled cooking and food preparation
• Assist in evaluating new recipes and products
• Coordinates food service activities to have meals prepared at scheduled time
• Operates all food service equipment and machinery
• Make adjustments to food items to accommodate guests with allergies or specific diet concern
• Estimates expected food consumption and organises preparation
• Meets with customers to ensure a great meal experience
• Alters dishes based on consumer suggestions or requirements
• Assist in evaluating new recipes and products
• Perform other duties and/or responsibilities of Cook as required from time to time

• Can work unsupervised
• Ability to take direction
• Ability to work in a team environment
• Excellent communication skills
• Fluent in English and Vietnamese (highly desirable)
• Has passion for great food and enjoys cooking mouth-watering dishes
