SUMMARY
The Chef de Partie at The Moving Food Co Pty Ltd (trading as Lanai Noosa) is responsible for managing and operating assigned kitchen sections, including preparing and cooking menu items using appropriate cooking methods, timing and temperature control, in accordance with established menus, recipes, portion standards and presentation guidelines.Reporting to the Head Chef, the role contributes to service delivery through section planning, mise en place, quality control, plating and coordination with the kitchen team, and supports seasonal specials and presentation standards. The role also ensures strict compliance with food safety, hygiene, allergen management and workplace health and safety requirements.
DUTIES- Prepare, portion, season and cook a range of menu items including meats, seafood, vegetables, sauces and garnishes, ensuring consistency with approved recipes, portion standards and presentation guidelines.
- Support the Head Chef with menu planning and daily specials by contributing practical input on ingredient selection, preparation techniques, flavour profiles and presentation, while considering food costs, seasonal availability and operational efficiency.
- Estimate food requirements for allocated service periods and assist with monitoring food usage to support cost control, minimise waste and maintain stock availability.
- Prepare and complete mise en place for assigned kitchen sections to ensure efficient workflow and readiness for service, including peak trading periods.
- Monitor the quality of dishes throughout all stages of preparation, cooking and presentation to ensure meals meet venue standards for taste, appearance and consistency.
- Operate commercial kitchen equipment safely and efficiently, including ovens, grills, fryers and cooktops, ensuring correct cooking times, temperatures and methods are applied.
- Plate and present dishes in accordance with Lanai Noosa’s service standards, maintaining attention to detail, accuracy and consistency across all services.
- Communicate food preparation progress and service timing with the Head Chef, kitchen team and front-of-house staff to support smooth coordination and timely delivery of meals.
- Manage stock control processes for allocated kitchen sections, including checking deliveries for quality and freshness, rotating stock using FIFO principles, ensuring correct labelling and storage, and reporting shortages or quality issues to senior staff.
- Ensure strict compliance with food safety, hygiene and sanitation regulations, including allergen management, prevention of cross-contamination and adherence to WHS and food safety standards.
- Maintain cleanliness, organisation and safety of kitchen workstations, utensils and equipment in accordance with workplace health and safety requirements.
- Assist with food preservation activities where required, including correct storage, chilling, freezing and handling of prepared ingredients to maintain quality and food safety.
- Work in accordance with operational kitchen procedures and standards set by the Head Chef to support consistent service delivery and uphold Lanai Noosa’s culinary reputation.
- Diploma in Hospitality Management
- Certificate III & IV in Commercial Cookery & Kitchen Management
- At least one year of experience working in a professional kitchen in a chef role (including Chef de Partie, Commis Chef, Demi Chef, Second Chef and Sous Chef levels).
