The role (hands-on, real ownership)You’ll run prep and service in a compact kitchen with clear systems.
You will:
Lead daily mise en place and service (meats, salsas, rice/beans, guac, tortillas, garnishes)
Execute batch recipes with portion + flavour consistency as the non-negotiable
Keep the kitchen organised, clean, and food-safe (always)
Use prep lists, par sheets, labelling, stock rotation — and improve them
Communicate directly with the owner + FOH to keep service smooth and calm
Help train and lift the rest of the kitchen team
Shifts: Mostly daytime / early evenings due to market trading, plus weekends and key service days.
What we’re looking forYou’re the kind of chef who:
Has solid experience in busy kitchens (CDP / Sous level ideal)
Works clean, fast, and calm — no ego, no drama
Cares about prep discipline and systems (not vibes)
Communicates clearly and respects teammates
Loves simple food done seriously well
Is curious about Mexican food (experience is a bonus, not required)
