Full Time Sous Chef$75,000 per annum plus Superannuation
We are seeking a creative and skilled Sous Chef to join our team specialising in Yum Cha and Cantonese cuisine. As a key member of our kitchen staff, you will work closely with the Head Chef to craft an extensive range of handmade dim sum and specialty delicacies that are not readily available in Australia.
In this role, you will be responsible for designing and executing innovative menu items, maintaining exceptional standards of quality and presentation, and ensuring the smooth and efficient operation of the kitchen. Your expertise and passion for authentic Cantonese flavours will be essential in delivering a memorable dining experience for our guests.
SOUS CHEF POSITION DESCRIPTION:- Assist in the design and execution of innovative and authentic Yum Cha and Cantonese menu items.
- Ensure high standards of quality, taste, and presentation in all dishes.
- Support the daily operations of the kitchen, including food preparation, cooking, and plating.
- Maintain strict hygiene and food safety standards in accordance with regulations.
- Collaborate with the Head Chef to develop new recipes and seasonal menus.
- Train and mentor junior kitchen staff to uphold the restaurant’s culinary excellence.
- Manage inventory, oversee stock levels, and liaise with suppliers for high-quality ingredients.
- Relevant Certificate IV in Cookery & Diploma of Hospitality Management.
- Minimum 2 years’ experience as a full-time chef (senior level preferred).
- Expertise in Yum Cha and Cantonese cuisine, including desserts.
- Proven ability to train and supervise kitchen staff.
- Knowledge of budgeting, food costing, and inventory management.
- Experience with purchasing, ordering, and minimising waste.
