Position Title: Chef de PartieSalary: $73,223.55 plus 11,5 % Superannuation
Peter Rowland Group Pty Ltd are looking for an experienced Chef de Partie for an immediate start. This position is a full-time ongoing position, working 38 hours per week based in Bundoora, VIC, 3083.
The Chef de Partie will be responsible for the following duties:
- Assisting the head chef with the creation, revision and implementation of menu.
- Preparing and cooking dishes following the event menu.
- Ensure high quality standards are followed within the entire process of food preparation and presentation of all dishes.
- Ensure dietary requirement are met during food preparation. Discuss menu modification with the kitchen staff, waiters and manager following customer’s specifications.
- Ensure all kitchen, food preparation and storage areas are maintained within a safe standard in liaison with the on a day-to-day basis.
- Manage the transfer of food items to other cost centres as necessary with the assistance of the stores department.
- Order all food to correct food cost centres and maintain food cost percentages as in the budget.
- Manage correct ordering procedures and cost controls. Assist with monthly stock take procedures.
- Maintain correct accounting processes for all orders, invoices and transfers.
- Direct staff in all areas of food preparation and service within Food Safety Plan guidelines.
- Conduct on the job training for all kitchen staff including cooking techniques, food handling procedures and food safety guidelines.
- Monitor kitchen staff performance and highlight training or disciplinary needs.
- Develop a good working relationship with all staff. Understand and implement OH&S procedures as required.
- Work with the company to maintain a safe working environment and report any unsafe work practices or unsafe work environments to the OH&S Manager.
- Ensure all kitchen cleaning rosters and procedures are maintained to company standards.
- Identify necessary equipment purchases, and/or repairs and maintenance.
For this position it is expected that you would possess the following qualifications and work experience:
- A Certificate IV in Kitchen Management/Commercial Cookery or relevant higher qualification with at least one year full-time experience working in a Chef De Partie role. This formal qualification can be substituted by at least three years of work experience in a Chef De Partie role.
Attributes such as the ability to performance under pressure working as a Chef De Partie will be highly regarded.
