Chef de Partie

Placed.au is looking for a full-time Chef de Partie for our client in Richmond, Victoria. This role is responsible for managing a designated kitchen section, ensuring high-quality food preparation, maintaining food safety standards, and supporting efficient kitchen operations within a fast-paced hospitality environment.

- Take full ownership of a designated section, ensuring that food is prepared and cooked to specification
- Oversee the work of crew within the section, delegating tasks and ensuring smooth operations
- Maintain section inventory, ensuring all items are stocked and rotated efficiently
- Ensure the kitchen and all related equipment are maintained and fully operational
- Oversee the cleanliness and organisation of kitchen stations and equipment
- Work closely with other sections to ensure a cohesive and efficient kitchen operation
- Provide support to crew, ensuring they follow food safety guidelines
- Step in to assist other sections during busy service periods when needed
- Ensure all dishes leaving the section meet the restaurant's presentation and quality standards
- Assist the Sous Chef and Head Chef with menu preparation and plating
- Ensure that ingredients are prepared and ready for service in a timely manner
- Maintain high standards of food hygiene and safety, adhering to health regulations
- Ensure that all kitchen operations comply with all health and safety regulations and food handling standards
- Maintain a clean, organised, and safe kitchen environment
- Monitor food storage, preparation, and cooking temperatures to ensure food safety
- Assist with training crew on proper food handling, preparation, and storage techniques to meet HACCP and workplace health and safety
- Ensure all kitchen crew are aware of allergen and dietary requirements for guests
- Must hold a Certificate IV in Commercial Cookery or a relevant field, or at least three (3) years of relevant work experience may substitute for the formal qualification
- Must possess at least one (1) year of relevant work experience as a Chef de Partie or in a similar role
- Strong knowledge of various cooking methods, ingredients, and kitchen equipment
- Strong understanding of health, safety, and hygiene regulations
- Excellent leadership and team management skills
- Ability to work under pressure and manage multiple tasks simultaneously
- Exceptional organisational and time management abilities
- Strong communication and interpersonal skills
- Creativity and passion for culinary arts
- Strong work ethic and dedication to maintaining high standards
Salary Range
$78,000 – $90,000 per annum excluding superannuation.
