Wanted : Experienced Chef
We are seeking a passionate and experienced Chef to join our team at Walpole Hotel Motel, located in the scenic and peaceful Southwest region of Western Australia. To join in our team of chefs, you’ll be responsible for leading kitchen operations and ensuring a high standard of food quality and customer satisfaction for our loyal local guests and tourists alike.
Key Requirements:
- Minimum 1 year of relevant experience as a chef in Australian businesses
- Australian Diploma qualification in Hospitality or related field and Australian Certificate IV Commercial Cookery or related field
- Strong understanding of food safety standards and kitchen management, relevant certificate holder preferred
- Excellent communication and leadership skills, and deep understanding of Australian regional cultures
- Fluent in English with the ability to work effectively with both kitchen team and front-of-house staff
- Advanced English listening and speaking skills enable fluent communication with Australian regional local customers and authorities.
- Ability to build rapport with customers, deliver superior service.
- Ability to work under pressure in a fast-paced environment.
- Committed to working and living long-term (at least three years) in a regional WA location
Your responsibilities:
You will need to work in our regional hotel with restaurant inside for majority servicing local loyal customers. You are expected to undertake duties, responsibilities and obligations for the day-to-day operation of the business under our head chef’s supervision. You are required to undertake below tasks:
- Plan and prepare high-quality meals for our in-house restaurant and bar service, ensuring consistency in taste, portioning, and presentation. This includes designing and updating seasonal menus, creating daily specials, and accommodating dietary needs (e.g. gluten-free, vegetarian, allergy-aware options).
- Monitor and enforce food safety and hygiene standards by conducting regular checks on food storage, handling practices, and kitchen cleanliness. Ensure that all kitchen operations comply with HACCP principles and Australian Food Standards Code.
- Manage kitchen inventory, including tracking ingredient usage, rotating stock to prevent spoilage, and placing timely orders with suppliers to avoid shortages while minimizing wastage. Maintain detailed records of stock levels and supplier deliveries.
- Train, supervise, and mentor kitchen staff, including junior cooks, apprentices, and kitchen hands. Assign daily prep tasks, ensure understanding of recipes and procedures, and foster a supportive and team-oriented work environment.
- Collaborate with management to track and control food cost percentages, implement portion control practices, and review supplier options to ensure profitability and sustainability of kitchen operations.
- Ensure full compliance with local food handling and safety regulations, including proper use of protective clothing, cleaning routines, and temperature control logs. Participate in routine internal or external inspections.
- Contribute creatively to menu development, incorporating fresh, locally sourced ingredients and drawing from regional culinary styles to cater to local customer preferences and tourism trends.
- Prepare catering orders and plated or buffet-style meals for small events, such as local functions, private dinners, or hotel-hosted gatherings. Coordinate with event planners and front-of-house staff to ensure smooth execution and timing.
- Report to the Head Chef on a weekly basis regarding operations, performance, and management matters. Assist the Head Chef with planning, budgeting, and team supervision.
