About the Position:
The Butcher position at YP Gourmet Meats involves preparing high-quality meat products for retail sale and customer orders, ensuring exceptional standards in presentation and customer satisfaction. This role requires expertise in meat processing, smallgoods production, and customer service, contributing to the shop’s reputation for excellence.
Key Responsibilities:
Prepare meat for sale by removing bones, trimming fat, and cutting, mincing, or grinding to specified shapes and sizes for display or custom orders.
Produce crumbed cuts, marinate, season, and cure special cuts of meat.
Select and prepare meat for smallgoods production.
Operate machinery to grind, mix, mince, tenderize, and fill sausages, as well as manage smoking chambers, cooking kettles, and vats.
Create seasonings and pickles by mixing spices, salt, and other ingredients.
Advise customers on suitable cuts of meat and their uses.

Assist in menu planning, scheduling, and estimating food production costs.

Requirements: Australian citizens and permanent residents are encouraged to apply.
Required Qualifications: AQF Certificate III in Meat Processing (or at least 3 years of relevant experience may substitute for formal qualifications).

Required Experience: Minimum 1 year of experience as a butcher.

Proficiency in meat cutting, preparation, and smallgoods production.
Knowledge of food safety and hygiene standards.
Ability to operate meat processing machinery safely and efficiently.
Strong customer service and communication skills.
Attention to detail and ability to maintain high standards of presentation.

Time management and ability to work in a fast-paced environment.
