Our valued client, Kokoro Sushi, is seeking two (2) passionate and experienced Cooks to join their vibrant team in Brighton, Victoria. The ideal candidates will have a strong background in Japanese cuisine and demonstrate a keen eye for presentation, precision, and culinary creativity.
Kokoro Sushi sources ingredients locally and ensures daily deliveries, allowing their Cooks to craft dishes that are innovative yet deeply rooted in traditional Japanese techniques. The successful applicant will contribute to a menu that blends seasonal produce with artistic flair and guarantee a memorable and flavourful dining experience.
The annual salary for the position is $73,310 to $78,052.
Responsibilities include:
- Inspect and ensure the quality and freshness of all ingredients.
- Prepare and cook a variety of dishes.
- Monitor and regulate grills, rice cookers, fryers, salamanders, and other kitchen equipment temperatures.
- Season food during cooking and ensure authenticity in flavour and presentation.
- Portion food accurately, plate dishes with attention to detail, and apply garnishes and sauces as required.
- Store ingredients properly in temperature-controlled environments to preserve freshness and prevent spoilage.
- Prepare meals following special dietary needs and allergy requirements.
- Assist in inventory control and estimating food requirements when necessary.
- Maintain a clean and organised kitchen environment in compliance with food safety regulations.
- Train junior kitchen staff in cooking techniques when required.
Qualifications:
- Should have at least 1 year post-qualification work experience as a Cook.
- Must hold a Certificate IV in commercial cookery or kitchen management, or a Certificate III in Commercial Cookery with 2 years on-the-job training.
- Previous experience in cooking Japanese cuisine is preferable.
