Our client, THE GRAND NEWCASTLE GFH PTY LTD, is seeking experienced Cooks and Chefs for multiple full-time positions at their venue - The Grand Hotel in Newcastle, NSW 2300. Offering competitive salaries ranging from AUD 70K to 80K per annum plus superannuation, the package is negotiable for the right candidate.

• The day-to-day operation of a busy kitchen, including delegating staff, stock rotation and relevant paperwork.
• Prepare and cook foods of all types, either on a regular basis or for special guests or functions.
• Determine production schedules and staff requirements necessary to ensure the timely delivery of services.
• Estimate amounts and costs of required supplies, such as food and ingredients.
• Inspect supplies, equipment, and work areas to ensure conformance to established standards.
• Monitor sanitation practices to ensure that employees follow standards and regulations.
• Analyse recipes to assign prices to menu items based on food, labour, and overhead costs.
• Collaborate with other personnel to execute the menu, considering factors such as seasonal availability of ingredients and the likely number of customers.
• Good knowledge of Occupational Health and Safety (WHS) AND HACCP
• Prepare and ensure a regulated oven, utensils, and grill for the shift
• Cook the order according to food health and safety standards
• Support senior chefs by executing their direction into consistently high-quality dishes, maintaining efficiency and precision across all sections of the kitchen.
• Demonstrate new cooking techniques and equipment to staff.
• Train junior staff to uphold the standard of the venue and maintain operational efficiency.

• Preferably have certificates III & IV in Commercial Cookery from Australia
• Have at least 2-3 years of work experience as a cook in a similar cuisine
• Good knowledge of occupational health and safety (WHS) and HACCP.
• Ability to work in a team.
• Excellent communication skills.
