Our Client, Purple Sheep Pty Ltd, trading as Astor Hotel Motel Albury, is looking to employ full-time Cooks and Chefs in multiple positions for its venue in Albury, NSW 2640. The positions will be full-time, and the salary will range from 70-80K AUD per annum plus superannuation, which will be negotiable for the right candidate.

SCOPE OF THE ROLE:- The day-to-day operation of a busy kitchen, including delegating staff, stock rotation and relevant paperwork.
- Prepare and cook foods of all types, either on a regular basis or for special guests or functions.
- Determine production schedules and staff requirements necessary to ensure the timely delivery of services.
- Estimate amounts and costs of required supplies, such as food and ingredients.
- Inspect supplies, equipment, and work areas to ensure conformance to established standards.
- Monitor sanitation practices to ensure that employees follow standards and regulations.
- Analyse recipes to assign prices to menu items based on food, labour, and overhead costs.
- Collaborate with other personnel to execute the menu, considering factors such as seasonal availability of ingredients and the likely number of customers.
- Good knowledge of Occupational Health and Safety (WHS) AND HACCP
- Cook the order according to food health and safety standards
- Support senior chefs by executing their direction into consistently high-quality dishes, maintaining efficiency and precision across all sections of the kitchen.
- Demonstrate new cooking techniques and equipment to staff.
- Train junior staff to uphold the standard of the venue and maintain operational efficiency.
- Be willing to relocate if you are interstate or in other cities.
- Preferably have Certificates III & IV in Commercial Cookery
- Be available on both days at weekends and be able to work split shifts.
- Have at least 2- 3 years of work experience as a Cook/Chef.
- Ability to work in a team.
