THE TRUSTEE FOR PIZZANTICA UNIT TRUST Brisbane
A full time opportunity for an Italian Chef to work in one of Brisbane’s leading Italian restaurants – Antica in Wilston, Queensland. No travel is involved with this position.
The intent is to fill the position in December 2024.
o Compliance to Cleaning Schedule and Routine Maintenance requirement
o Compliance to Food Safety procedures and requirements
o Forecast food requirements effectively
o Weekly Food Preparation - planning and execution
o Quality control of food preparation process and outcomes
o Ensure a safe work environment
o Coordinate cooking and kitchen activities and supervise kitchen staff
o Food Safety and OHS Regulations
o Italian Cuisine food preparation techniques and knowhow
o Menu Planning - Italian dish design and preparation, in line with contemporary trends and best practices
o Ability identify and resolve issues early and quickly
o Team leading skills and production coordination experience
Minimum of 3 years cooking experience in a traditional Italian restaurant required. Italian work experience will be highly regarded.
Good communication skills required – English
Offering a competitive salary, that will be negotiated based on skills and experience. Minimum starting salary of $70,000. The employee is to provide all necessary uniform and personal protection equipment required for the Chef position.The intent is to fill the position in December 2024.

Key areas of responsible: o Food Quality and Presentation of dishes to guests (KPI driven)
o Compliance to Stock Management and Ordering Procedureso Compliance to Cleaning Schedule and Routine Maintenance requirement
o Compliance to Food Safety procedures and requirements
o Forecast food requirements effectively
o Weekly Food Preparation - planning and execution
o Quality control of food preparation process and outcomes
o Ensure a safe work environment
o Coordinate cooking and kitchen activities and supervise kitchen staff
o Manage staff usage and effective shift loading and off-loading
Knowledge, skills, experience: o Management - Runs Kitchen in the absence of the Head Chef/Owner
o Stock Manage – Ensuring stocktake is done accurately, Stock managed by FIFO principle, Stock Ordering and Receipting.o Food Safety and OHS Regulations
o Italian Cuisine food preparation techniques and knowhow
o Menu Planning - Italian dish design and preparation, in line with contemporary trends and best practices
o Ability identify and resolve issues early and quickly
o Team leading skills and production coordination experience
o Minimum of 3 years’ experience cooking in an Italian kitchen/restaurant
