Key Responsibilities
Tayim Restaurant Leadership
As the operational leader of Tayim, Harbour Rocks Hotel's signature restaurant, you will spend the majority of your time leading day-to-day service, supporting the team and ensuring every guest receives a memorable dining experience.
Tayim celebrates modern Levantine cuisine and genuine hospitality, making this role ideal for someone who enjoys leading service in a premium restaurant environment.
You will:
- Lead service from the floor and maintain a visible presence during trading periods.
- Ensure consistently high service standards and guest satisfaction.
- Work closely with the Head Chef to deliver a seamless restaurant experience.
- Coach, train and develop front-of-house team members.
- Drive team engagement, accountability and service culture.
- Manage reservations, service flow, table allocation and guest recovery.
Multi-Outlet Operations
While Tayim will be your primary focus, you will also oversee service delivery across Eric's Bar, in-room dining and conference & events.
You will:
- Support operations across all food and beverage outlets.
- Coordinate and deliver conferences, private dining and special events.
- Ensure service standards remain consistent across all guest touchpoints.
- Assist with activations, promotions and seasonal experiences.
- Support beverage service, cocktail offerings and wine recommendations.
- Lead, roster and develop a high-performing team.
- Manage labour costs and staffing levels in line with business needs.
- Maintain service SOPs and operational standards.
- Ensure compliance with WHS, food safety and RSA requirements.
- Continuously identify opportunities to improve service and efficiency.
- Previous experience as a Restaurant Manager, Venue Manager, Assistant Venue Manager or similar hospitality leadership role.
- Strong background in premium dining, boutique hotels, restaurants or multi-outlet hospitality venues.
- Experience leading service in busy, guest-focused environments.
- Passion for food, wine and hospitality.
- Strong understanding of restaurant operations and team leadership.
- Ability to train, coach and motivate teams.
- Hands-on leadership style and willingness to lead from the front.
- Excellent communication and organisational skills.
- Experience working with Mediterranean, Middle Eastern, Levantine or similar cuisine styles will be highly regarded.
