HEAD COOK JOB BRIEF
The Head Cook is responsible for leading the culinary operations on our three-day, two-night liveaboard trips, ensuring the highest quality of food preparation, presentation, and overall kitchen operations. This full-time role involves supervising a team of five cooks, scheduling maintenance, training new staff, and coordinating all cook-related duties.
The position requires forecasting purchasing requirements, creating menus tailored to diverse dietary needs, and maintaining a well-organized and clean galley. Punctuality in meal service is critical to support the scheduling of dive activities onboard.
Primary Responsibilities:
Train and mentor new kitchen staff to maintain high culinary standards.
Forecast purchasing requirements to ensure timely and efficient provisioning.
Design and develop menus that cater to various dietary preferences and restrictions.
Coordinate and lead a team of five cooks to ensure smooth kitchen operations.
Schedule maintenance and upkeep of galley equipment and facilities.
Supervise and ensure adherence to food safety and hygiene standards.
Prepare and cook meals in accordance with the established guidelines in the Cookie Folder.
Ensure meals are served promptly to align with the diving schedule.
Maintain the cleanliness and presentation of the galley at all times.
Restock supplies, spare linens, and prepare cabins at the end of each trip.
Additional responsibilities include assisting the Dive Supervisor and vessel Master as required. For team members with special language capabilities, there is an expectation to assist with translations during safety, dive, or snorkel briefings for customers.
Qualifications
Each Head Cook shall hold and maintain the following qualifications:
Valid/current senior first aid certification.
Valid/current (12-month) certification in Oxygen Resuscitation.
Current AED Administrator certification.
Valid Queensland motor vehicle driver license, suitable for operating any vehicle supplied by PRO DIVE CAIRNS.
Certificate in Occupational Health and Safety at Sea.
Attendance at Reef Fleet Security Awareness Training.
Recreational Shipmaster’s License.
Completion of the Pro Dive Cairns Task Book within the predetermined timeframe.
Food Safety Certificate.
Salary
This full-time position offers an annual salary of $65,835.
